I present to you Warm Black Bean and Corn Salsa.  This can be eaten with chips as an appetizer or over a grain of choice or salad greens for a healthy and filling main dish.
Prep Time 30 minutes mins
Cook Time 15 minutes mins
 
- .5 each red onion chopped
 - 3-4 each garlic minced
 - 1 each bell pepper any color
 - 1 can black beans drained
 - 1 cup frozen corn or more as desired
 - 1 tsp cumin
 - .5 tsp salt
 - 1 each tomato chopped
 - 1 each avocado chopped
 - 3 tbsp cilantro chopped
 
Lime/Olive Oil Dressing
- 1 ounce olive oil
 - 2 ounce lime juice
 - .25 tsp garlic powder
 - .5 tsp cumin
 - 2 cups grain grain..quinoa, brown rice, millet
 
 
Saute onions for 3-4 minutes
Add garlic and cumin and saute 1 minute
Add bell pepper, black beans and corn
Saute veg until fork tender.  I didn’t want mine cooked much, just warmed through
Once done serve over your favorite grain..quinoa, brown rice, millet
Top with tomatoes, avocado and cilantro and lime/olive oil dressing
