Nourish Bowl

We really like a hearty nourish bowl.  Pretty simple…grain, veggies, beans and a topping.  They hit all the nutrient buttons…protein, fiber, and complex carbs  plus lots of phytonutrients from the veggies. 
Its fun to have a theme too, this one is a Fajita Nourish Bowl.
Ingredients
Ingredients:
- 1 each: red yellow and orange bell pepper, thinly sliced
 - 1 red onion thinly sliced
 - 2 cups mushrooms of choice I used baby bella’s
 - 1 tsp cumin
 - 1 tsp adobo seasoning
 - 1/4 tsp red chili flakes
 - 1 can black beans drained and rinsed
 - 5-6 stalks greens of choice I used laciento kale, stems removed and chopped
 - 2 TBS lime juice
 
Toppings:
- Cilantro chopped
 - Avocado chopped
 - Salsa I used store bought
 - Grain of choice… brown rice, quinoa, millet
 
Instructions
- Saute onions and peppers 5-8 minutes until they start to soften but still crunchy
 - Add cumin, adobo seasoning, chili flakes and saute until fragrant, about 1-2 minutes
 - Add mushrooms and greens and saute until softened and greens are bright green
 - Add black beans and mix
 - Serve over grain, top with cilantro, avocado and salsa ( or siracha)
 - Enjoy!
