Chickpea Peanut Butter Chocolate Chip Cookies

These cookies are the best! A sweet treat you'll feel good about after you have one….or two, or three. Don't let the chickpeas scare you away because you won't notice them and they boost the protein and fiber content providing a yummy but nutrient dense snack. They are good by themselves or with a cup of tea or coffee or a cold glass of plant based milk.

Ingredients
  

  • 1 – 15 oz can chickpeas drained and rinsed
  • 1/2 cup peanut butter…I use natural with no sugar added
  • 1/3 cup maple syrup…I use natural grade A syrup
  • 2 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup dark chocolate chips

Instructions
 

  • Preheat oven to 350 degrees
  • Add all ingredients to food processor or high speed blender
  • Blend until smooth, add chocolate chips and mix with a spoon until combined
  • Place inch scoops on parchment paper lined baking sheet, bake 12-15 minutes
  • Wait until completely cooled
  • Can store in fridge in a container for up to 5 days
