Bob made this healthy blueberry cobbler and it was delish! Was it really good because he made it and not me? LOL Always nice when someone else cooks for you. Thanks Bob!
Blueberries are a super food because of their high antioxidant level, phytonutrients and Vitamin C. Put them in smoothies, eat them in oatmeal, throw them in a salad and of course, have them in desert.

Ingredients
  

Blueberry base:

  • 4 cups fresh blueberries or frozen
  • 2 TBS maple syrup
  • 1 TBS lemon juice
  • 1 tsp vanilla
  • 1 TBS arrowroot or cornstarch

Cobbler:

  • 1 cup rolled oats
  • 1 cup finely chopped walnuts
  • 1 cup almond flour
  • 1/4 tsp salt
  • 1/2 cup maple syrup I think next time we’ll do 1/3 cup
  • 1/3 cup coconut oil melted
  • 1 tsp vanilla

Instructions
 

  • Pre heat oven to 350 degrees
  • In large bowl mix together blueberries, maple syrup, lemon juice and vanilla
  • Spoon berries into an 8x8” pan, leaving juice behind in bowl
  • In another bowl mix together oats, walnuts, almond flour and salt
  • Stir in maple syrup, coconut oil and vanilla until well combined
  • Spread cobbler topping on top of blueberries
  • Bake in oven for 40-45 minutes or until topping is golden brown
  • Let cool for 15 minutes before eating. Store leftovers in refrigerator.
